If you are looking for a yummy comfort food, you are in luck! This Crock Pot Cowpoke Casserole I adapted from Gooseberry Patch’s 303 ‘Round the Clock Recipesis super simple and so yummy! These flavors work perfectly together! You’re gonna love it!

How to Make Cowpoke Casserole in a Crock Pot

Cook your ground beef with your onion and drain. Mix together your ground beef, salt and pepper to taste, chili powder, chili beans and tomato sauce in a large bowl. Pour your mixture into a 4-quart crock pot. Mix together your cornbread mix, egg and milk. Pour evenly over your beef mixture. Place a couple of paper towels under your lid, cover and cook on high for two hours.

    This is really good! I added a can of chili fixins rotel tomatoes, sprinkled some shredded cheese between the chili and cornbread and baked in oven at 375 for 25 mins. It was delicious!!

      Hi Nancy!

      The paper towels catch any condensation that might have drop off of the lid. You just place the paper towels on the top of your slow cooker insert, put your lid on top of the paper towels and tug at the edges of the paper towels to make sure they aren’t drooping in the center. Hope this helps!

      I am not sure how this one would turn out in the casserole crock, so I hate to recommend it without trying it first.       I would also love to know the answer to this! If you have tried it doubled in 6 at slow cooker, please let me know! This is what is keeping me from trying. My husband HATES veggies and it’s so hard to find Slow cooker recipes he’ll eat!😐

      I have NOT tried doubling this recipe. If you double it, slowly add in your milk so that you can make sure the batter isn’t too thin. Watch it closely the first time you make it so you will know how to adjust the timing. Enjoy!
